  • 4 tablespoons liquid of choice (such as unsweetened plant milk, fresh orange/apple juice, or plain water)
  • Optional: 1 to 2 tablespoons pure maple syrup (only if your berries are very tart and you want a touch of extra sweetness)

Directions

  1. Break Down the Fruit: Place the solid frozen berries into the bowl of your food processor. Pulse and process the fruit until it is completely broken down and resembles fine, crumbly fruit crystals. (Note: A high-speed blender can work in a pinch, but the friction from the blades generates heat, which will make the final texture a bit softer and more meltable).
  2. Emulsify into Sorbet: With the food processor running, slowly drizzle in your liquid of choice one tablespoon at a time (along with the maple syrup, if you choose to use it). Let the machine run for a few moments between each addition. Keep processing until the crumbly fruit suddenly transforms into a beautifully thick, velvety, scoopable sorbet. Be careful not to over-liquidize; you shouldn't need more than 4 tablespoons of total liquid.
  3. Serve: For the absolute best texture, scoop the sorbet into bowls and enjoy it immediately while it is perfectly thick and frosty.

Storing and Freezing Tips

If you have any leftovers, simply transfer the extra sorbet into a well-sealed, airtight container and store it in the freezer for up to 3 months. Because this recipe contains no heavy cream or refined sugars to keep it soft, it will freeze quite solid.
