Comforting "Blueberry Pie" Breakfast Oats
This quick, weekday breakfast tastes remarkably like a warm fruit pie but contains absolutely no refined sugar. Instead, a ripe mashed banana is cooked directly into the oats for a soft, natural sweetness, while a simple two-ingredient stovetop compote serves as a rich berry topping.
Ingredients
For the Quick Berry Compote:
- 1 cup frozen blueberries
- 1 to 2 tablespoons fresh orange juice
For the Stovetop Oats:
- ½ cup rolled oats (certified gluten-free if needed)
- 1 cup unsweetened almond milk (or your preferred plant milk)
- 2 tsp chia seeds
- ½ ripe banana, thoroughly mashed
Optional Toppings:
- A handful of fresh blueberries
- A sprinkle of oil-free, fruit-sweetened granola for crunch
Cooking Directions
- Simmer the Blueberry Topping: In a small pot over high heat, combine the frozen blueberries and the fresh orange juice. Bring the liquid to a boil, then let it bubble away for 5 to 8 minutes. Stir occasionally until the fruit breaks down into a thick, syrupy, and jam-like compote. Remove from heat and set aside.
- Cook the Oats: Simultaneously, bring the oats and plant milk to a gentle boil in a separate saucepan over medium heat. Once it starts bubbling, stir in the mashed banana and chia seeds, then lower the heat to medium-low. Let the porridge simmer for about 8 to 10 minutes, stirring frequently, until the grains are tender and all the milk has been absorbed.
- Assemble the Bowl: Scoop the creamy banana oats into a breakfast bowl. Spoon the warm blueberry compote generously over the top, and garnish with fresh berries and a bit of crunchy granola if desired. Serve warm.
Make-Ahead Variation (Overnight Oats)
If you prefer a cold, no-cook breakfast for busy mornings, you can easily turn this into overnight oats. Mix the oats, chia seeds, mashed banana, and just half of the plant milk (½ cup) together in a mason jar. Seal the jar and leave it in the refrigerator overnight. In the morning, simply layer your pre-made blueberry compote and extra toppings right over the chilled oats and enjoy.
