Ingredients

For the Stovetop Oats:

  • ½ ripe banana, thoroughly mashed

Cooking Directions

  1. Simmer the Blueberry Topping: In a small pot over high heat, combine the frozen blueberries and the fresh orange juice. Bring the liquid to a boil, then let it bubble away for 5 to 8 minutes. Stir occasionally until the fruit breaks down into a thick, syrupy, and jam-like compote. Remove from heat and set aside.
  2. Cook the Oats: Simultaneously, bring the oats and plant milk to a gentle boil in a separate saucepan over medium heat. Once it starts bubbling, stir in the mashed banana and chia seeds, then lower the heat to medium-low. Make-Ahead Variation (Overnight Oats)

If you prefer a cold, no-cook breakfast for busy mornings, you can easily turn this into overnight oats. Mix the oats, chia seeds, mashed banana, and just half of the plant milk (½ cup) together in a mason jar. Seal the jar and leave it in the refrigerator overnight. In the morning, simply layer your pre-made blueberry compote and extra toppings right over the chilled oats and enjoy.
