Oven Roasted Potatoes

Potatoes are a versatile and nutrient-rich vegetable that provide several important health benefits. They are a good source of complex carbohydrates for energy, and contain fiber, vitamin C, vitamin B6, and potassium, which support immune health, heart function, and nerve function. When prepared simply (like baking or roasting with minimal oil), potatoes can be a healthy, satisfying part of a balanced plant-based diet.

Here's a simple and delicious recipe for oven-roasted potatoes—crispy on the outside, tender on the inside, and full of flavour. Perfect as a side dish for just about any meal.

Ingredients (serves 3-4):

  • 1½ to 2 pounds potatoes (Yukon gold, red, or baby potatoes work well)
  • 2–3 tablespoons olive oil (or use a small splash of water or broth for oil-free)
  • 1 teaspoon garlic powder
  • 1 teaspoon dried rosemary, thyme, or Italian seasoning
  • Salt to taste
  • Fresh parsley or lemon juice for garnish (optional)

Instructions:

Preheat the Oven: Preheat your oven to 425°F (220°C).
Prep the Potatoes: Wash and cut the potatoes into even-sized chunks (about 1-inch pieces). You can peel them or leave the skins on for extra texture and nutrients.
Season: In a large bowl, toss the potatoes with olive oil (or a splash of water), garlic powder, herbs, salt, pepper, and any optional seasonings like paprika.
Roast: Spread the potatoes out in a single layer on a parchment-lined baking sheet.
Roast for 30–40 minutes, turning once halfway through, until golden brown and crispy on the edges.
Serve: Remove from oven and sprinkle with fresh parsley or a squeeze of lemon juice, if desired. Serve hot.
