This delicious, creamy carob mousse is a chocolate-free way to enjoy mousse! This plant- based recipe is made with carob powder, which is naturally sweet, thus allowing for less added sweetener.
Ingredients (serves 2)
- 1 ripe avocado
- 3 tablespoons carob powder (unsweetened)
- 2–3 tablespoons maple syrup or raw honey (adjust to taste)
- 1 teaspoon vanilla extract (optional, but recommended)
- 2 tablespoons plant-based milk (almond, oat, or coconut), more if needed for texture
- Pinch of sea salt (optional, enhances flavour)
Instructions
- Scoop & Blend: Scoop the avocado flesh into a food processor or blender.
- Add Ingredients: Add the carob powder, maple syrup (or honey), vanilla extract, plant-based milk, and pinch of salt.
- Blend Until Smooth: Blend on high until the mixture is completely smooth and creamy. Scrape down the sides as needed. Add more milk 1 teaspoon at a time if the texture is too thick.
- Taste & Adjust: Taste and adjust sweetness or carob as desired.
- Chill (Optional): You can enjoy it right away, or refrigerate for 30–60 minutes for a firmer, chilled mousse.
- Serve: Spoon into small bowls or glasses. Top with shredded coconut, chopped nuts, or berries if you like.
Notes
- Carob is naturally sweet, so you might find you need less sweetener than in cocoa-based recipes.
- The avocados add a creamy, rich texture that eliminates the need for any added oil or butter.
- This mousse can double as a frosting or filling for cakes or parfaits!
